Have a Picnic in Your Backyard

When the weather is beautiful and you can’t get away for the whole weekend, have a mini staycation. Invite people over to your house and have a backyard picnic outside.

One of the best reasons to have a picnic at home is you can show off your best dinnerware. Grab a big blanket to mark your picnic sets. You may want to add a few water proof cushions or pillows for your guests to sit on. Set up your ‘table’ with cloth napkins and silverware. Skip the stemware and have ice tea glasses even if you are serving mimosas. You’ll appreciate not getting up to refill the top heavy glasses after a big spill.

Make picnic baskets or a unique cheese platter by finding a cheesemaker local to you. Get a baguette cut into rounds and lightly toast them. Serve with cherry preserves and an assortment of nuts. Serve some fruit as well on a square dinnerware plate to dress it up.

A chilled soup is a great place to start. One of the easiest to make is yogurt cucumber. I like to add fresh minced dill to minced peeled cucumber and plain yogurt. You can use milk or veggie broth to thin it out a little if needed. Try a chilled fruit soup for something different. Add a small container of vanilla yogurt to some orange juice and fresh blueberries for a beautiful tasty treat.

Make a salad using shredded nappa cabbage and chicken. Toss in a peanut cilantro dressing and top with toasted sesame seeds. If it’s strawberry season, you could toss some strawberries and arugula in a balsamic dressing. Top with goat cheese medallions and more strawberries for decoration.

To keep it simple make bar cookies for dessert. Lemon bars, pecan bars, brownies, blondies or a mix of all of them are a great ending for your meal. While you’re at it go ahead and freeze the extras for your next party. After you have one picnic, you’ll want to have more.
